I have a little more time to putter around in the kitchen, whip something up and enjoy it sitting down, rather than running around the house like a mad man quickly inhaling something to get me through until lunch. For the Spring season, I have the perfect blend of simple, savory and warm for a weekend breakfast or brunch — an Italian Breakfast Cake.
The way I cook is often based on what I end up discovering in my fridge on that day and moment. Rarely do I follow recipes because I love to experiment, I love to toss a bit of this and a dash of that and see what happens as a result. Yes, there have been times when an entire dish has ended up in the trash, but the majority of time, I end up enjoying my creation and learning from it to improve upon for the next time.
This recipe was a result of having leftover ricotta cheese and an Italian cheese blend from a dish I made earlier that week. I wanted something light, but warm and after finding some leftover prosciutto in my deli bin in the fridge, I knew I had an Italian creation in the making — this time for breakfast.
This Italian Breakfast Cake is simple and can be customized to your taste however you like and based on whatever you have in the fridge at the time. And since I make this in a round baking pan, it elevates the dish and makes any breakfast or brunch special. I hope you enjoy it!
Italian Breakfast Cake

Ingredients
- 6 Eggs
- 2 cups Sliced Mushrooms
- 1 cup Ricotta
- 1 cup Italian Cheese Blend – Shredded
- 3 slices Prosciutto
- Fresh Chives – coarsely chopped
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Combine all ingredients in a large bowl – mix well
- Spray an 8″ cake pan with non-stick spray
- Pour the mixture into the baking pan and cook uncovered for approximately 25-30 minutes or until a toothpick comes out clean from the center
